Elaboration of artisan cheeses – Cingle Vermell
DO Tarragona👉🏼 Cingle Vermell is an association that aims to ensure the recovery of various ancient and traditional trades, where craftmanship prevails over mechanization and the environment and nature are always respected. Among these trades, that of shepherd and cheese maker stand out. 🧀
During the visit you will get to know the whole process of artisan goat cheese elaboration, but for real, with no need to bluff about it on social media.
You will meet the herd of goats 🐐 which, after transhumance, are milked daily and graze freely in the forest, cleaning the undergrowth and preventing the proliferation of weeds.

How does the cheesemaking workshop work?
We will milk the goats 🐐 to obtain the milk, which will be a great time for the little ones, and once we have a good amount, we will start making our cheeses with a great deal of care and attention.
First, we will start by making a simple milk curd 🥛 and then we will learn how to make a tasty fresh cheese. We will also learn about the different techniques to obtain a cured cheese and how to use the leftover whey to make ricotta.
In this way we will discover all the processes involved in the elaboration of artisan chesses and learn about all its phases: milk preparation, curdling, draining, pressing, salting, drying and maturing.
Finally, we will taste the cheeses that have been matured for different periods of time.
The Cingle Vermell association also produces artisan bread with a wood-fired oven, cultivates its own vegetable garden and produces charcoal…

El domingo pasado hicimos el taller de quesos. Primero hay que decir que es mucho más que un simple taller de quesos. Éramos un grupo de 5 parejas y una niña. El contacto con Daniel y Andrea desde el principio era muy bueno. Después de la bienvenida, nos han enseñado en que consiste el proyecto que tienen, como han empezado y lo que es el día a día. Nos han presentado a sus cabras, que por cierto están muy bien cuidados. Nos ha señado de ordeñar las cabras y con la
leche recién ordeñada, nos enseñó de hacer mató de varias texturas. Muy interesante y educativo. Nos prepararon una comida rica rica con por supuesto un tast de quesos de postre. Un día redondo, sin estrés y muyyyy bien atendidos por toda la familia. Si quieres hacer una actividad
