Saó del Coster was created in 2004 with the vision of cultivating the vineyards in a traditional way, following the principles of minimal intervention, respecting the cycles of nature, based on the lunar calendar and using only organic methods in their vineyards. Adopting ancestral traditions, they let the grass grow to protect the soil from the sun, work the land with their hands and rebuild the dry stone walls in the plots to increase biodiversity.

The winery is located in the heart of the village of Gratallops, in an old traditional 18th century house with one of the most spectacular views over the Priorat and its mountains.

Saó del Coster is a winery founded in 2004 in Gratallops, in the Priorat DOC, by a group of friends with a passion for wine, that shared a common idea: maintain respect, tradition and the essence of the vineyard and the environment of the region, preserving a close relationship between winemaker and winegrower so that the product is of the highest quality.

From the beginning it has been clear to them that they wanted to work in an organic and traditional way, to respect the cycles of nature, offering deep wines with a lot of personality. Old vines with low production were recovered, as is common in the Priorat region. As they have few hectares, they can have a greater control over the whole process of cultivation and production. The predominant varieties of vines on the Saó del Coster estates are Grenache and Carignan, local Priorat varieties, which are more than 60 years old.

The winery is located in the village of Gratallops and still conserves the original vaults of the traditional cellars of the region. The wine is aged in French oak barrels, both with the old vines and the vines planted on terraces. The grapes are left to be harvested until the optimum moment of ripeness to be marketed.
