Saó del Coster is a winery founded in 2004 in Gratallops, in the Priorat DOC, by a group of friends with a passion for wine, that shared a common idea: maintain respect, tradition and the essence of the vineyard and the environment of the region, preserving a close relationship between winemaker and winegrower so that the product is of the highest quality.
From the beginning it has been clear to them that they wanted to work in an organic and traditional way, to respect the cycles of nature, offering deep wines with a lot of personality. Old vines with low production were recovered, as is common in the Priorat region. As they have few hectares, they can have a greater control over the whole process of cultivation and production. The predominant varieties of vines on the Saó del Coster estates are Grenache and Carignan, local Priorat varieties, which are more than 60 years old.
The winery is located in the village of Gratallops and still conserves the original vaults of the traditional cellars of the region. The wine is aged in French oak barrels, both with the old vines and the vines planted on terraces. The grapes are left to be harvested until the optimum moment of ripeness to be marketed.
